Snickerdoodles...The All Time Favorite


 I'm not sure if you're old enough to remember being sent home with the Scholastic Book Order Form, but I definitely am.  In fact, I'm pretty sure my love of baking can be traced to the moment I got this cookbook in my book order.  (I wanted to order so many more, but my parents usually made me order no more than 3)


This guy was the game changer.  Not too long ago we found a copy in a free book bin and I don't know how often I've been more excited!  My copy had been lost years earlier and now I had a new one that I could share with the kiddos!

My favorite recipe from this book was the snickerdoodles.  They're Ivy's little brother's favorite cookie EVER and I get a stern talking to whenever I've gone too long without baking them.  Now that it's September, I'll probably be making them quite regularly!  Cinnamon and Sugar for the win!







Classic Snickerdoodle Cookies

Ingredients:
1/2 cup softened butter
3/4 cup sugar
1 large egg
1 tsp vanilla
1 1/4 cups flour
1/4 teaspoon kosher salt
1/2 tsp baking soda
1 tsp cream of tartar

Cinnamon Sugar - 1 tablespoon sugar + 1 tsp cinnamon

Directions:

1.  Preheat oven to 350 degrees.
2.  In stand mixer, cream together the butter and sugar for about 5 minutes until fluffy.  Add the egg and vanilla and mix to combine.  It's okay if it looks a little curdled.
3.  In a medium bowl combine flour through cream of tartar.  Turn mixer on low and add the dry ingredients.
4.  Make walnut size balls of dough and roll them in the cinnamon sugar.  Bake 6 to a pan for 10-13 minutes until golden on the sides.
5.  Let cool and enjoy a classic.  They'll stay fresh for 3 days...if they last that long!
